Is there any plugin where users can create labels (not with what Xenforus brings to start the topics) if not that a user wants to write in a profile #test and leave the label form

You mean tags? XF allows it OOTB but for topics, not sure if for profile posts. And it's for the entire thread, not only your answer as it servers for search functionality.

If you mean something like a hashtag (as in social networks) I don't think something like that exists (it's a forum at the end of the day ?).

Maybe something like a keyword linking (Siropu has a very good one) is what you can adjust to suit your needs.
